The Swedish meatballs on the menu are reminiscent of the furniture giant from Sweden, but that is where the comparison ends. Skål is a beautiful restaurant, located in a municipal monument in the centre of Soest. With an innovative interior and a nod to Scandinavia.
When you walk into Skål, you immediately notice the beautiful eye-catcher: the bar in the middle of the restaurant. It is surrounded by tables and chairs in the colours of the northern lights, many decorative accessories and, of course, different types of wood. The interior is stylish yet simple, functional yet warm. Typical of the Scandinavian style. Why the interest in Scandinavia? "My brother has had a Finnish girlfriend for years. So we have been to Scandinavia many times. In addition, many restaurants nowadays have a Mediterranean orientation and we wanted something different for once," says manager Cindy Roeland. Together with her brother Jimmy, she is in charge of Skål, which opened its doors in October 2021.
Not tapa, but kladdkaka
Restaurant Skål seats 70 guests inside and another 100 guests can enjoy the delicacies for lunch or dinner prepared by chef Jimmy and his team outside on the terrace. "We are a European restaurant with a Scandinavian twist. Our menu features a number of iconic dishes from the North. Swedish meatballs, viking bröd, skagen and cakes such as mustikkapiirakka and kladdkaka. But also a carpaccio, a steak and a steak tartare. But they are not made from reindeer meat, which is what some guests expect," says Cindy smiling. She has been working in the catering industry since she was 15.
Smarter due to Covid
Before Cindy opened Skål (Danish for ‘Cheers’), she worked as a manager in her parents' restaurant Oude Smidse in Ouderkerk aan de Amstel. "My parents took over the Oude Smidse in 2014 just as it was. Before opening Skål we had to furnish it completely. And because of Covid we had to adjust our budget. That was actually positive because we made much smarter purchases and only spent half in the end."
For clients who want their glasses and dishes to sparkle, improving the water quality is essential – and that calls for demineralisation or osmosis.
Easy choice: quality technology
Just like in the Oude Smidse, MEIKO is allowed to do the washing up at Skål. "They are just really good machines, which is why we chose MEIKO again." Behind the bar is a M-iClean UM glasswasher with reverse osmosis, and in the kitchen there is a M-iClean HM hood type dishwashing machine with automatic hood system and rack recognition.

MEIKO, a full-service provider
"To keep costs down we have the machines on hire purchase, including maintenance and chemicals. MEIKO knows better than anyone what is best for their machines. And with the MEIKO ACTIVE Complete package, maintenance is taken care of, we never run out of detergent or rinse aid, and any malfunctions are also taken care of. We now have everything from one supplier and therefore one point of contact. And that is a good thing. The machines work really well. We take the glasses out of the machine dry and hang them up immediately. And the dishes in the kitchen come out great, too. Now we just need to find staff working the machines," laughs Cindy.
